The 2016 Cabernet Sauvignon is an elegant, yet powerful wine that reveals delicate aromas of black licorice, toasty vanilla from the oak, and cassis. The aromatic aspect leads into a full-bodied, layered palate showcasing violets, sweet tobacco, and black currants. This vintage does have some medium tannins up front, but in fact finishes pleasantly soft. This vintage should be a wine to age in your cellar for a good while. Please pair with a high fat food or something in the umami category of taste. Some excellent ideas for example would be a Charred Gruyere Burger with Shitaki Mushrooms or a Marinated Ribeye Steak. It also received Silver Medal at the 2020 San Francisco Chronicle Wine Competition, which is the largest competition of American wines and a Bronze Medal at the 2019 San Francisco Chronicle Wine Competition. In addition, our 2016 Cabernet Sauvignon was awarded a Bronze Medal at the prestigious TEXSOM International Wine Awards. Additionally, it received the prestigious honor of being selected as a Wine Enthusiast Cellar Selection, which is reserved for “products deemed highly collectible and/or requiring time in a temperature-controlled wine cellar to reach their maximum potential.”
